Recently I was gifted the newest Pinch of Nom cookbook to try, featuring all new, time-saving meals under 500 calories. Quickly, there were 2 particular recipes I wanted to try, and loved them both! [ad]
✅️ Eggy Bread Toastie for lunch – 5/5!
397 calories per serving/34g carbs, gluten-free and high protein. 5 minutes prep, 8 minutes cooking time. This was slightly messy in prep, but oh so worth it. I probably added a bit more cheese than on the recipe too to make it extra cheesy!


✅️ Sausage, sage & rosemary traybake for tea – 5/5!
423 calories per serving/37g carbs, easy to make veggie/vegan, dairy and gluten-free, can be frozen, high protein. 15 mins prep & up to 30 minutes cooking time. I substituted the butter beans in this recipe with extra potatoes and also added some pickled red cabbage to serve! A small but satisfying portion which was full of flavour and really easy to make.

I can’t wait to try more! Some other recipes that have caught my eye are; pesto egg bagels, fajita crunchwrap, chicken curry strudel, bolognese potato hash, pizza crumpets and more. This recipe book also has; over 50 recipes and macros for all recipes.
I actually feel like I need a bigger air fryer now (haha), after initially being reluctant to buy one. It definitely makes things quicker, easier, CRISPIER, and less hot in the kitchen during the heatwaves (haha).
We are a big fan of Pinch of Nom cookbooks as they are very easy to follow, generally healthy and contain ingredients that aren’t hard to find. Like with any cookbook collecytions, there are some very similar recipes overall if you collect a few books, but there are always a lot of gems to give you inspiration.
