Chicken & Mushroom Sweet & Savoury Sauced Noodles with Basil

Perfect for a weekend tea, these noodles are slurpingly good! Inspired by a tweeted recipe from Bon Appetit Magazine, I tweaked this recipe slightly to taste and to use up some freebies I had from Yutaka. Find the original recipe here.

We enjoyed cooking this together on a Friday night, the dish being fairly easy to make and taking only 30 mins altogether. This noodle-based, Thai-inspired meal is really delicious and has an authentic taste to it. Anyone that loves Pan-Asian/Thai food will love this!!

Ingredients (for 2);

  • 4 boneless chicken thighs
  • 130g mushrooms
  • 2 garlic cloves
  • 2 chillies
  • 32g hoisin sauce
  • 32g barley miso paste (you should be able to find this in any large supermarkets)
  • 4 tbsp soy sauce
  • 220g dried noodles – we had soy bean noodles
  • Handful of basil

Recipe (takes approx 30 mins);

  1. Chop the chicken thighs into quarters
  2. Tear the mushroom into small pieces
  3. Coarsely chop the garlic gloves and chillies and using a mortar and pestle (or a bowl and end of a rolling pin like I did), ground the garlic and chillies with a pinch of salt into a sort of paste.
  4. Mix together the hoisin sauce, barley miso and soy sauce in a bowl and set aside.
  5. Bring a pan of salter water to the boil and cook the noodles according to packet instructions. Drain, rinse under cool water and set aside.
  6. Heat some oil in a large wok over a medium-high heat. Cook the garlic & chilli paste for about 30 seconds until fragrant. Add the chicken and cook, stirring constantly, until the pieces are just cooked through.
  7. Add the mushrooms to wok until browned and softened
  8. Add the sauce stirring often until the sauce is dark and reduced and everything is coated, about 5 minutes. Add about 50ml water and mix gently, leaving everything to simmer for about 10-15 minutes, stirring occasionally until the sauce thickens (like gravy)
  9. Tear a handful of basil into pieces and add to the wok with the cooked noodles, toss gently to coat everything in the sauce.
  10. Serve & enjoy!
