One of my favourite things to make for breakfast on a weekend is my homemade spicy guacamole on toast topped with a fried egg, nom nom!! And to add a bit more spice I like to drizzle some Kankun hot sauce on top too.
Guacamole ingredients (for 1):
- 1 avocado
- Half a red onion, chopped finely
- Handful of cherry tomatoes, chopped
- 1 chilli, finely chopped
- A generous squeeze of lime juice
- A pinch of garlic powder
- Bunch of coriander, finely chopped
- Drizze of olive oil
Mash all of the above together, spread generously on top of some seeded and toasted bread, and top with a fried egg. Try it with feta crumbled over the top too to make it super delicious. Healthy, filling and yummy!
